- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup unsalted butter, softened
- 1 egg (at room temperature)
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/3 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine flour, brown sugar, granulated sugar, baking soda, ginger, cinnamon, nutmeg, and cloves.
- In a separate bowl, cream together butter and egg until smooth. Add the vanilla extract and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In another bowl, beat the cream cheese until smooth, then add powdered sugar and mix until well combined.
- Drop spoonfuls of the cookie dough onto the prepared sheet, making an indentation in the center of each.
- Fill each indentation with a small amount of cream cheese mixture.
- Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool on the baking sheet before transferring to a wire rack.
Notes
- For an extra touch, sprinkle a little cinnamon on top of the cream cheese filling.
- These cookies can be enjoyed warm or stored in an airtight container for several days.
