- 1 cup all-purpose flour
- 1/2 teaspoon baking soda

- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, cream together the butter, brown sugar, and granulated sugar.
- Add the egg and vanilla to the butter mixture, and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- In a separate bowl, beat together the cream cheese, powdered sugar, and lemon juice until smooth.
- Form small balls of dough and create a well in the center to fill with the cream cheese mixture.
- Bake for 12-15 minutes until the edges are golden.
- Let cool before serving.
Notes
- For extra flavor, add a pinch of cloves to the cookie dough.
- These cookies can be served warm or chilled.
