- 1 pound chicken breast, diced
- 2 cups gnocchi
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup spinach, chopped
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Stir in the minced garlic and Italian seasoning, cooking until fragrant.
- Add in the gnocchi and chicken broth, bringing to a simmer.
- Cook until gnocchi is tender and has absorbed some of the broth.
- Add the spinach and stir until wilted.
- Season with salt and pepper before serving.
Notes
- For a creamier dish, add a splash of heavy cream.
- Feel free to add other vegetables like bell peppers or mushrooms.
