- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 2 cups mixed vegetables (peas, carrots, corn)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup mashed potatoes
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the turkey bacon until crispy, then remove and chop.
- In the same skillet, add olive oil, diced onion, and garlic; sauté until softened.
- Add the chicken ham and mixed vegetables, cooking for 5 minutes.
- Season with salt and pepper.
- In a baking dish, layer the cooked mixture and top with mashed potatoes.
- Bake in the oven for 25-30 minutes until golden brown.
Notes
- For extra flavor, add cheese on top before baking.
- Serve with a side salad for a complete meal.
