Instructions
- In a large pot, heat olive oil over medium heat. Add beef and brown on all sides.
- Add onion, carrots, and garlic; sauté until softened.
- Pour in beef broth and red wine. Stir in thyme and bay leaves.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until beef is tender.
- Remove bay leaves, season with salt and pepper, and garnish with parsley before serving.

- For a thicker stew, mix 1 tablespoon of cornstarch with cold water and stir it into the stew during the last 10 minutes of cooking.
