Ingredients

  • 1 pound chicken breast, diced
  • 8 ounces orzo pasta
  • 4 slices turkey bacon, cooked and crumbled
  • 1 large onion, sliced
  • 2 cups chicken broth
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until caramelized.
  3. Add chicken and cook until browned; stir in garlic, thyme, and pepper.
  4. In a large pot, prepare orzo according to package instructions. Drain.
  5. Combine orzo, chicken mixture, broth, and half of the cheese in a casserole dish.
  6. Top with remaining cheese and crumbled turkey bacon.
  7. Bake for 25-30 minutes until heated through and cheese is bubbly.
