- 1 pound chicken breast, diced
- 8 ounces orzo pasta
- 4 slices turkey bacon, cooked and crumbled
- 1 large onion, sliced
- 2 cups chicken broth
- 1 cup shredded cheese
- 1 tablespoon olive oil
- 1 tablespoon garlic, minced
- 1 teaspoon thyme
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté onions until caramelized.
- Add chicken and cook until browned; stir in garlic, thyme, and pepper.
- In a large pot, prepare orzo according to package instructions. Drain.
- Combine orzo, chicken mixture, broth, and half of the cheese in a casserole dish.
- Top with remaining cheese and crumbled turkey bacon.
- Bake for 25-30 minutes until heated through and cheese is bubbly.
Notes
- For added flavor, use low-sodium chicken broth.
- This casserole can be made ahead and refrigerated before baking.
