- 1 cup rolled oats
- 1 cup milk (dairy or non-dairy)
- 1 ripe banana
- 1 egg
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Butter or oil for cooking
Instructions
- In a blender, combine the rolled oats and milk. Blend until the oats are finely ground.
- Add the banana, egg, baking powder, vanilla extract, and salt to the blender. Blend until smooth.
- Heat a non-stick skillet over medium heat and add a little butter or oil.
- Pour about 1/4 cup of the batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter, adding more butter or oil as needed.
- Serve warm with your favorite toppings.
Notes
- For extra flavor, add a pinch of cinnamon to the batter.
- Top with fresh fruit, nuts, or maple syrup for added sweetness.
