- 4 large bell peppers
- 1 pound ground turkey
- 6 slices turkey bacon, chopped
- 1 cup cooked rice
- 1 cup diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 cup shredded cheese
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the chopped turkey bacon until crispy.
- Add the ground turkey and cook until browned.
- Stir in cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Stuff the bell peppers with the mixture and place them in a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes, or until the peppers are tender.
Notes
- For a spicier version, add chopped jalapenos to the filling.
- You can substitute quinoa for rice for a healthier option.
