Ingredients

Instructions

  1. In a blender, puree the raspberries until smooth.
  2. Strain the puree through a fine sieve to remove seeds.
  3. In a saucepan, combine the raspberry puree, sugar, and lemon juice. Cook over medium heat until the sugar dissolves. Let it cool.
  4. In a large bowl, whip the heavy cream and vanilla extract until soft peaks form.
  5. Gently fold the cooled raspberry mixture into the whipped cream until well combined.
  6. Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.
