A simple and delightful raspberry mousse recipe that is perfect for a light dessert.

- 2 cups fresh raspberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- In a blender, puree the raspberries until smooth.
- Strain the puree through a fine sieve to remove seeds.
- In a saucepan, combine the raspberry puree, sugar, and lemon juice. Cook over medium heat until the sugar dissolves. Let it cool.
- In a large bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Gently fold the cooled raspberry mixture into the whipped cream until well combined.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.
Notes
- For a sweeter mousse, add more sugar to taste.
- Garnish with fresh raspberries or mint leaves for presentation.
