- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup chopped nuts (optional)
- 1/2 cup streusel topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together pumpkin puree, sugar, brown sugar, and vegetable oil.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually combine dry ingredients with the wet ingredients.
- Fold in nuts if desired.
- Pour batter into muffin tins and top with streusel.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
