- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of cupcake liners placed in a muffin tin.
- In another bowl, beat the cream cheese until smooth, then add sugar and vanilla, mixing well.
- Add the eggs one at a time, mixing after each addition until smooth.
- Stir in the sour cream until well combined.
- Pour the cream cheese mixture over the crust in each muffin tin.
- Bake for 15-20 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
