Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of cupcake liners placed in a muffin tin.
  4. In another bowl, beat the cream cheese until smooth, then add sugar and vanilla, mixing well.
  5. Add the eggs one at a time, mixing after each addition until smooth.
  6. Stir in the sour cream until well combined.
  7. Pour the cream cheese mixture over the crust in each muffin tin.
  8. Bake for 15-20 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 4 hours before serving.
