Easy Low Carb Chicken Casserole with Turkey Bacon and Veggies

A delicious and healthy low carb chicken casserole made with turkey bacon and fresh veggies.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, diced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 cup shredded cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the chicken, turkey bacon, broccoli, cauliflower, and garlic.
  3. In a separate bowl, mix the heavy cream, smoked paprika, salt, and pepper.
  4. Pour the cream mixture over the chicken mixture and stir to combine.
  5. Add half of the shredded cheese and mix well.
  6. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  7. Bake for 25-30 minutes or until the cheese is golden and bubbly.

Notes

  • For added flavor, consider adding your favorite herbs.
  • This casserole can be made ahead of time and stored in the refrigerator.
