Ingredients

  • 3 tablespoons coffee liqueur
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 20 gingerbread cookies
  • 1 tablespoon cocoa powder

Instructions

  1. In a bowl, combine brewed coffee, brown sugar, and coffee liqueur. Stir until sugar dissolves.
  2. In another bowl, whip mascarpone cheese, heavy cream, vanilla, ginger, and cinnamon until smooth.
  3. Dip gingerbread cookies briefly in the coffee mixture and layer them in a serving dish.
  4. Spread half of the mascarpone mixture over the cookies.
  5. Repeat layers, finishing with mascarpone mixture on top.
  6. Refrigerate for at least 4 hours or overnight before serving.
  7. Dust with cocoa powder before serving.
