- 1 cup strong brewed coffee
- 1/2 cup brown sugar
- 3 tablespoons coffee liqueur
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 20 gingerbread cookies
- 1 tablespoon cocoa powder
Instructions
- In a bowl, combine brewed coffee, brown sugar, and coffee liqueur. Stir until sugar dissolves.
- In another bowl, whip mascarpone cheese, heavy cream, vanilla, ginger, and cinnamon until smooth.
- Dip gingerbread cookies briefly in the coffee mixture and layer them in a serving dish.
- Spread half of the mascarpone mixture over the cookies.
- Repeat layers, finishing with mascarpone mixture on top.
- Refrigerate for at least 4 hours or overnight before serving.
- Dust with cocoa powder before serving.
