  • Salt to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add turkey bacon and cook until crispy.
  3. Stir in onion and garlic; sauté until softened.
  4. Add diced tomatoes, kidney beans, elbow macaroni, chicken broth, chili powder, cumin, and salt.
  5. Bring to a boil, then reduce heat and simmer until macaroni is tender.
