- 1 tablespoon olive oil
- 1 pound turkey bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 2 cups elbow macaroni
- 4 cups chicken broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt to taste
- 1 cup shredded cheese (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add turkey bacon and cook until crispy.
- Stir in onion and garlic; sauté until softened.
- Add diced tomatoes, kidney beans, elbow macaroni, chicken broth, chili powder, cumin, and salt.
- Bring to a boil, then reduce heat and simmer until macaroni is tender.
- If using, stir in the shredded cheese until melted.
- Serve hot and enjoy!
