- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- In the same pot, add onion and garlic, sautéing until fragrant.
- Add the chicken ham and cook for a few more minutes.
- Pour in the chicken broth and add the potatoes, bringing to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in the milk and cheddar cheese until melted. Season with paprika, salt, and pepper.
- Serve hot, garnished with crumbled bacon.
Notes
- This soup can be made ahead and reheated.
- Use low-fat cheese for a lighter version.
