Ingredients

  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced tomatoes
  • 1 cup nutritional yeast

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine the quinoa, vegetable broth, black beans, corn, bell pepper, and spices.
  3. Add the diced tomatoes and nutritional yeast, then stir until well mixed.
  4. Cover the dish with aluminum foil and bake for 30 minutes.
  5. Remove the foil and bake for an additional 10-15 minutes until the quinoa is cooked and the top is slightly crispy.
  6. Let it cool for a few minutes before serving.
