- 1 cup quinoa
- 2 cups vegetable broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup diced tomatoes
- 1 cup nutritional yeast
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, combine the quinoa, vegetable broth, black beans, corn, bell pepper, and spices.
- Add the diced tomatoes and nutritional yeast, then stir until well mixed.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the quinoa is cooked and the top is slightly crispy.
- Let it cool for a few minutes before serving.
Notes
- This dish can be customized with your favorite vegetables.
- For added creaminess, you can mix in some avocado before serving.
