- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup spinach leaves
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, and sauté until onion is translucent.
- Add carrots, celery, zucchini, and bell pepper, and cook for 5 minutes.
- Stir in diced tomatoes and vegetable broth.
- Add basil, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add spinach leaves and cook for an additional 5 minutes.
- Serve hot and enjoy!
Notes
- You can add other vegetables like potatoes or green beans for variety.
- For a spicier version, add a pinch of red pepper flakes.
