  • 4 cups vegetable broth

  • 1 cup spinach leaves

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, and sauté until onion is translucent.
  3. Add carrots, celery, zucchini, and bell pepper, and cook for 5 minutes.
  4. Stir in diced tomatoes and vegetable broth.
  5. Add basil, oregano, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Add spinach leaves and cook for an additional 5 minutes.
  8. Serve hot and enjoy!

  • You can add other vegetables like potatoes or green beans for variety.
  • For a spicier version, add a pinch of red pepper flakes.
