- 2 cups all-purpose flour

- 1 cup buttermilk

- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup blackberry puree
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
- Slowly add the wet ingredients to the dry ingredients and mix until smooth.
- Carefully stir in the boiling water and blackberry puree until evenly combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use fresh blackberries for the puree for the best flavor.
- For a richer flavor, consider adding a splash of espresso to the batter.
