- 2 pounds baby potatoes
- 4 slices turkey bacon
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh parsley
Instructions
- Boil the baby potatoes in salted water until tender, about 15-20 minutes.
- In a skillet, cook the turkey bacon until crispy, then chop into pieces.
- Preheat the oven to 425°F (220°C).
- Drain the potatoes and let them cool slightly. Place them on a baking sheet and gently smash each potato with a fork.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Bake for 25-30 minutes until crispy and golden.
- In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper.
- Add the crispy potatoes, turkey bacon, green onions, and parsley to the bowl and toss gently to combine.
- Serve warm or at room temperature.
Notes
- For extra flavor, add a sprinkle of cheese on top before baking.
- This recipe can easily be made vegetarian by omitting the turkey bacon.
