A delightful and innovative twist on traditional potato salad, featuring crispy smashed potatoes and turkey bacon.


Ingredients

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley

Instructions

  1. Boil the baby potatoes in salted water until tender, about 15-20 minutes.
  2. In a skillet, cook the turkey bacon until crispy, then chop into pieces.
  3. Preheat the oven to 425°F (220°C).
  4. Drain the potatoes and let them cool slightly. Place them on a baking sheet and gently smash each potato with a fork.
  5. Drizzle with olive oil and sprinkle with salt and pepper.
  6. Bake for 25-30 minutes until crispy and golden.
  7. In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper.
  8. Add the crispy potatoes, turkey bacon, green onions, and parsley to the bowl and toss gently to combine.
  9. Serve warm or at room temperature.

Notes

  • For extra flavor, add a sprinkle of cheese on top before baking.
  • This recipe can easily be made vegetarian by omitting the turkey bacon.
