- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the carrots with olive oil, garlic powder, salt, and black pepper.
- Spread the carrots on a baking sheet in a single layer.
- Bake for 20-25 minutes, turning halfway through, until the carrots are tender and beginning to brown.
- Remove from the oven and sprinkle with Parmesan cheese.
- Return to the oven for an additional 5 minutes or until the cheese is melted and crispy.
- Garnish with chopped parsley before serving.
Notes
- For extra crispiness, broil for an additional minute at the end.
