- 1 pound gnocchi
- 2 cups fresh spinach

- 1/4 cup grated Parmesan cheese
Instructions
- Cook gnocchi according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat and add minced garlic.
- Add the cooked gnocchi to the skillet and fry until crispy, about 5-7 minutes.
- Stir in the spinach, salt, and pepper, cooking until spinach wilts.
- Remove from heat and sprinkle with Parmesan cheese.
Notes
- For extra flavor, add red pepper flakes.
- Try substituting kale for spinach for a different taste.
