  • 1 cup panko breadcrumbs

  • 2 eggs
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the salmon into bite-sized pieces.
  3. In one bowl, mix flour with salt and pepper.
  4. In another bowl, beat the eggs.
  5. In a third bowl, add panko breadcrumbs.
  6. Dip each salmon piece first in the flour, then in the egg, and finally coat with panko breadcrumbs.
  7. Place the salmon bites on a baking sheet.
  8. Bake for 15-20 minutes until golden and crispy.
  9. In a separate bowl, mix mayonnaise, sweet chili sauce, sriracha, and garlic powder for the sauce.
  10. Serve the salmon bites with the sauce on the side.
