Ingredients

  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants into 1/2-inch rounds and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  5. Dip each eggplant slice in beaten eggs, then coat with the breadcrumb mixture.
  6. Place the slices on a baking sheet and bake for 25-30 minutes until golden brown.
  7. In a baking dish, layer marinara sauce, baked eggplant slices, and mozzarella cheese.
  8. Bake for an additional 15-20 minutes until the cheese is bubbly.
