- 2 medium eggplants
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the eggplants into 1/2-inch rounds and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Dip each eggplant slice in beaten eggs, then coat with the breadcrumb mixture.
- Place the slices on a baking sheet and bake for 25-30 minutes until golden brown.
- In a baking dish, layer marinara sauce, baked eggplant slices, and mozzarella cheese.
- Bake for an additional 15-20 minutes until the cheese is bubbly.
