Ingredients

- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 cup heavy cream
- 2 cups gnocchi
- 1 cup spinach
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
- Stir in the minced garlic and cook for another minute.
- Add the vegetable broth and bring to a simmer.
- Stir in the heavy cream and dried thyme.
- Add the gnocchi and cook according to package instructions until they float.
- Stir in the spinach and season with salt and pepper to taste.
- Serve warm and enjoy!
Notes
- For a vegan version, substitute heavy cream with coconut cream or a plant-based alternative.
- You can add any vegetables of your choice.
