- 6 slices turkey bacon
- 1 can white beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon Italian seasoning
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 cups spinach, chopped
- 1/2 cup heavy cream
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
- In the same pot, add onion and garlic, cooking until softened.
- Add diced tomatoes, white beans, vegetable broth, Italian seasoning, salt, and pepper. Bring to a simmer.
- Stir in the chopped spinach and heavy cream. Cook for a few more minutes until heated through.
- Serve hot, topped with the chopped turkey bacon.
Notes
- Adjust the thickness of the stew by adding more or less broth.
- For a vegetarian version, omit the turkey bacon.
