Creamy Tomato White Bean Stew with Turkey Bacon for Comfort

Ingredients

  • 6 slices turkey bacon
  • 1 can white beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups spinach, chopped
  • 1/2 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, add onion and garlic, cooking until softened.
  3. Add diced tomatoes, white beans, vegetable broth, Italian seasoning, salt, and pepper. Bring to a simmer.
  4. Stir in the chopped spinach and heavy cream. Cook for a few more minutes until heated through.
  5. Serve hot, topped with the chopped turkey bacon.

Notes

  • Adjust the thickness of the stew by adding more or less broth.
  • For a vegetarian version, omit the turkey bacon.
