- 2 cans white beans, drained and rinsed
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Add minced garlic and stir for an additional minute.
- Stir in the diced tomatoes, vegetable broth, white beans, basil, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let simmer for 20 minutes.
- Stir in the heavy cream and cook for another 5 minutes.
Notes
- For extra creaminess, blend a portion of the beans before adding the cream.
