- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups vegetable broth
- 1 cup heavy cream
- 1/2 cup fresh basil, chopped
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Stir in crushed tomatoes and vegetable broth, bring to a simmer.
- After 20 minutes, remove from heat and blend the soup until smooth.
- Return to heat, stir in heavy cream and fresh basil.
- Season with salt and pepper, serve warm.
Notes
- For added depth, try using roasted tomatoes.
- Garnish with extra basil or a drizzle of balsamic glaze.
