- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 cup vegetable broth
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1/4 cup fresh basil, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for 1 minute.
- Stir in the crushed tomatoes, vegetable broth, sugar, salt, and pepper.
- Bring the mixture to a simmer and let it cook for about 20 minutes.
- Remove from heat and let it cool slightly, then blend until smooth.
- Return the soup to the pot, stir in the heavy cream and basil.
- Heat through and serve warm.
Notes
- Add more or less cream depending on your preferred creaminess.
- Garnish with additional basil before serving.
