Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and cook for 1 minute.
  3. Stir in the crushed tomatoes, vegetable broth, sugar, salt, and pepper.
  4. Bring the mixture to a simmer and let it cook for about 20 minutes.
  5. Remove from heat and let it cool slightly, then blend until smooth.
  6. Return the soup to the pot, stir in the heavy cream and basil.
  7. Heat through and serve warm.
