- 8 ounces pasta
- 2 cups corn, fresh or frozen
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 4 slices turkey bacon, cooked and crumbled
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions; drain and let cool.
- In a large bowl, combine the corn, cherry tomatoes, red onion, mayonnaise, sour cream, lime juice, cooked pasta, turkey bacon, chili powder, salt, and pepper.
- Toss everything together until well mixed.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a spicy kick, add diced jalapeños.
- Feel free to substitute bacon with a vegetarian option for a meatless version.
