Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cream cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake for 45 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  4. Add sliced mushrooms and cook until browned. Toss in spinach, salt, and pepper until wilted.
  5. Stir in cream cheese and Parmesan until creamy.
  6. Once sweet potatoes are done, let them cool slightly, then split open and fluff the insides with a fork.
  7. Fill each sweet potato with the creamy mushroom-spinach mixture. Serve warm.
