- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups fresh spinach
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cream cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce the sweet potatoes with a fork and bake for 45 minutes until tender.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
- Add sliced mushrooms and cook until browned. Toss in spinach, salt, and pepper until wilted.
- Stir in cream cheese and Parmesan until creamy.
- Once sweet potatoes are done, let them cool slightly, then split open and fluff the insides with a fork.
- Fill each sweet potato with the creamy mushroom-spinach mixture. Serve warm.
