- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups spinach
- 2 carrots, diced
Instructions
- In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, and Italian seasoning. Form into meatballs.
- In a large pot, bring chicken broth to a boil and add meatballs.
- Cook meatballs until browned and cooked through, about 10 minutes.
- Add heavy cream, spinach, and carrots. Simmer for 5 minutes until heated through.
- Serve hot.
