Ingredients

- 4 slices turkey bacon
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 medium onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- Add olive oil to the pot, sauté garlic and onion until translucent.
- Pour in chicken broth and bring to a simmer.
- Add heavy cream and parmesan cheese, stirring until melted.
- Stir in thyme, and season with salt and pepper. Top with crumbled bacon before serving.
Notes
- For a thicker soup, blend a portion of it before serving.
- This soup pairs well with crusty bread.
