- 4 slices turkey bacon
- 1 cup onion, diced
- 2 cloves garlic, minced
- 2 cups diced potatoes
- 3 cups chicken broth
- 1 cup corn, frozen
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and crumble.
- Add onion and garlic to the pot, sauté until softened.
- Stir in diced potatoes and chicken broth, bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Add corn and heavy cream, stirring to combine.
- Season with salt and pepper, then add crumbled bacon and parsley.
- Serve hot.

- For added flavor, consider using smoked paprika.
- Top with additional parsley before serving.
