Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced turkey bacon and cook until crispy.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Stir in the sliced mushrooms and thyme, cooking until the mushrooms are softened.
- Pour in the vegetable broth and bring to a simmer.
- Reduce heat and stir in the heavy cream. Season with salt and pepper.
- Simmer for 10 minutes, then serve hot.
