- 3 pounds beef roast
- 1 cup cranberry sauce
- 1/2 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together cranberry sauce, balsamic vinegar, brown sugar, garlic powder, onion powder, salt, and pepper.
- Rub the beef roast with olive oil and season with salt and pepper.
- Place the roast in a baking dish and pour the cranberry balsamic mixture over the top.
- Cover the dish with foil and bake for about 2 hours, until the internal temperature reaches 145°F (63°C).
- Remove from the oven, let it rest for 10 minutes before slicing.
