- 1 cup split peas
- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- Salt to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
- In the same pot, add onion, carrots, and celery. Sauté until vegetables are tender.
- Add garlic and cook for an additional minute.
- Stir in split peas, chicken broth, thyme, and pepper. Bring to a boil.
- Reduce heat and simmer for about 45 minutes, or until peas are tender.
- Add chicken ham and cooked turkey bacon back to the pot. Stir and heat through.
- Season with salt to taste before serving.
Notes
- For a thicker soup, blend portion of the soup and return it to the pot.
- You can add more vegetables like potatoes or spinach for extra flavor and nutrition.
