Cozy Split Pea Soup with Turkey Bacon and Chicken Ham Delight

Ingredients

  • 1 cup split peas
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • Salt to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Sauté until vegetables are tender.
  3. Add garlic and cook for an additional minute.
  4. Stir in split peas, chicken broth, thyme, and pepper. Bring to a boil.
  5. Reduce heat and simmer for about 45 minutes, or until peas are tender.
  6. Add chicken ham and cooked turkey bacon back to the pot. Stir and heat through.
  7. Season with salt to taste before serving.

Notes

  • For a thicker soup, blend portion of the soup and return it to the pot.
  • You can add more vegetables like potatoes or spinach for extra flavor and nutrition.
