- 2 teaspoons fresh ginger grated
- 8 cups chicken or vegetable broth
- 1 pound Thai potstickers
- 2 cups bok choy chopped
- 1 cup mushrooms sliced
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 2 green onions sliced
- 1 tablespoon lime juice
Instructions
- Heat vegetable oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant.
- Pour in the broth and bring to a boil.
- Add the potstickers, bok choy, and mushrooms, and reduce heat to simmer.
- Stir in soy sauce, sesame oil, and lime juice.
- Cook until potstickers are heated through and vegetables are tender.
- Garnish with green onions before serving.

- This soup can be made ahead of time and reheated when ready to serve.
