- 3 pounds beef chuck roast
- 8 slices turkey bacon
- 2 large onions, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 300°F (150°C).
- In a large oven-safe pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
- In the bacon fat, sauté the onions until golden brown, about 15-20 minutes. Add the garlic and cook for another minute.
- Season the pot roast with salt and pepper, then sear it in the pot on all sides until browned.
- Add the beef broth, Worcestershire sauce, thyme, and the reserved bacon back into the pot.
- Cover and transfer to the oven. Cook for about 3-4 hours, or until the roast is tender.
- Once done, remove from the oven and let rest for 15 minutes before slicing.
Notes
- For best results, let the roast rest to retain juices.
- Serve with crusty bread for dipping.
