Ingredients

  • 3 pounds beef chuck roast
  • 8 slices turkey bacon
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large oven-safe pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
  3. In the bacon fat, sauté the onions until golden brown, about 15-20 minutes. Add the garlic and cook for another minute.
  4. Season the pot roast with salt and pepper, then sear it in the pot on all sides until browned.
  5. Add the beef broth, Worcestershire sauce, thyme, and the reserved bacon back into the pot.
  6. Cover and transfer to the oven. Cook for about 3-4 hours, or until the roast is tender.
  7. Once done, remove from the oven and let rest for 15 minutes before slicing.

Notes

  • For best results, let the roast rest to retain juices.
