- 200g pitted dates, chopped
- 300ml boiling water
- 100g unsalted butter, softened
- 150g dark brown sugar
- 2 large eggs
- 200g self-raising flour
- 1 tsp baking powder
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, combine the chopped dates with boiling water and let them soak for about 10 minutes.
- In another bowl, cream together the softened butter and dark brown sugar until light and fluffy.
- Beat in the eggs, one at a time, and then stir in the soaked dates with their water.
- Sift in the self-raising flour and baking powder, and add the vanilla extract. Fold until just combined.
- Pour the mixture into a greased baking dish and bake for 30-35 minutes.
- While the pudding is baking, prepare the toffee sauce by heating brown sugar and cream in a saucepan until melted and smooth.
- Once baked, poke holes into the pudding and pour half the toffee sauce over it. Let it absorb for a few minutes before serving with the remaining sauce.
Notes
- For an extra touch, serve with vanilla ice cream or whipped cream.
- Ensure dates are pitted before chopping for the best texture.
