  • 300ml boiling water
  • 100g unsalted butter, softened
  • 150g dark brown sugar
  • 2 large eggs
  • 200g self-raising flour
  • 1 tsp baking powder
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, combine the chopped dates with boiling water and let them soak for about 10 minutes.
  3. In another bowl, cream together the softened butter and dark brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time, and then stir in the soaked dates with their water.
  5. Sift in the self-raising flour and baking powder, and add the vanilla extract. Fold until just combined.
  6. Pour the mixture into a greased baking dish and bake for 30-35 minutes.
  7. While the pudding is baking, prepare the toffee sauce by heating brown sugar and cream in a saucepan until melted and smooth.
  8. Once baked, poke holes into the pudding and pour half the toffee sauce over it. Let it absorb for a few minutes before serving with the remaining sauce.
