- 1 one whole turkey (12–14 pounds)
- 1 cup unsalted butter, softened
- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 large onion, quartered
- 1 large carrot, chopped
- 1 large celery, chopped
- 4 cups chicken broth
Instructions
- Preheat your oven to 325°F (165°C).
- While the oven is heating, prepare the turkey by removing the giblets and patting it dry with paper towels.
- In a bowl, mix the softened butter with salt, pepper, rosemary, and thyme.
- Rub the butter mixture all over the turkey, including under the skin.
- Stuff the cavity with onion, carrot, and celery.
- Place the turkey in a roasting pan and pour broth into the pan.
- Roast the turkey in the oven for about 2 to 3 hours, basting every 30 minutes.
- Check the turkey for doneness using a meat thermometer (internal temperature should reach 165°F).
- Once cooked, let it rest for at least 20 minutes before carving.
