- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 2 cups potatoes, diced
- 2 cups clam juice
- 1 cup heavy cream
- 1 can clams, drained
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, cook turkey bacon until crispy. Remove and chop.
- Add olive oil, onion, and garlic to the pot and sauté until onions are translucent.
- Add diced potatoes and clam juice. Simmer until potatoes are tender.
- Stir in heavy cream, clams, thyme, and chopped turkey bacon. Cook until heated through.
- Season with salt and pepper to taste. Serve hot.
Notes
- For a thicker chowder, use a potato masher to mash some potatoes.
- Top with fresh herbs for added flavor.
