- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons ground cinnamon
- 1/2 cup brown sugar, packed
- 1 cup powdered sugar
- 2–3 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, and salt.
- In another bowl, cream the butter and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture until just combined.
- In a small bowl, mix the brown sugar and cinnamon together.
- Spread half of the cookie dough onto a baking sheet, sprinkle with the cinnamon-sugar mixture, and top with the remaining dough.
- Bake for 10-12 minutes or until golden brown.
- Let cool before icing.
- For the icing, mix powdered sugar and milk to desired consistency, then drizzle over cookies.
