- 3 ripe bananas, mashed

- 1/4 cup brewed espresso, cooled
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mix the mashed bananas, melted butter, sugars, eggs, and vanilla until combined.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Fold in the chocolate chips and cooled espresso.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-65 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
- For added flavor, consider using dark chocolate chips.
- Ensure the bananas are very ripe for the best sweetness.
