- 4 cups chicken, diced
- 2 medium shallots, diced
- 4 slices turkey bacon, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
- Add shallots and sauté until soft.
- Add diced chicken and cook until browned.
- Pour in chicken broth and bring to a simmer.
- Stir in heavy cream, thyme, salt, and pepper. Cook for another 10-15 minutes.
- Garnish with fresh parsley before serving.
