Ingredients

  • 4 medium zucchinis
  • 1 cup shredded cheese
  • 1 cup enchilada sauce
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1 tsp cumin
  • Salt to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice zucchinis lengthwise and scoop out some flesh to create a boat.
  3. In a bowl, mix cheese, black beans, corn, cumin, and salt.
  4. Stuff the zucchini boats with the cheese mixture.
  5. Place the stuffed zucchinis in a baking dish and pour enchilada sauce on top.
  6. Bake for 25-30 minutes until zucchinis are tender and cheese is melted.
