- 4 medium zucchinis
- 1 cup shredded cheese
- 1 cup enchilada sauce
- 1/2 cup black beans
- 1/2 cup corn
- 1 tsp cumin
- Salt to taste
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Slice zucchinis lengthwise and scoop out some flesh to create a boat.
- In a bowl, mix cheese, black beans, corn, cumin, and salt.
- Stuff the zucchini boats with the cheese mixture.
- Place the stuffed zucchinis in a baking dish and pour enchilada sauce on top.
- Bake for 25-30 minutes until zucchinis are tender and cheese is melted.
Notes
- For extra flavor, add some chopped onions or bell peppers to the filling.
- These can be made ahead and baked later.
