- 1 cup shredded cheese
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed

Instructions
- Preheat oven to 375°F (190°C).
- Slice zucchini in half lengthwise and scoop out seeds.
- In a bowl, mix quinoa, black beans, salsa, cumin, and chili powder.
- Stuff the zucchini halves with the mixture and top with cheese.
- Drizzle with olive oil and bake for 25-30 minutes.
