- 2 cups bell peppers, sliced
- 1 cup onion, sliced
- 1 tablespoon fajita seasoning
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine chicken breasts, bell peppers, onion, fajita seasoning, and olive oil. Mix well.
- Transfer the mixture to a baking dish and bake for 25 minutes.
- Remove from the oven, sprinkle with cheddar cheese and diced tomatoes.
- Return to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
Notes
- For extra flavor, marinate the chicken in the fajita seasoning for a few hours before cooking.
