- 4 cups potatoes, diced
- 1 cup cheddar cheese, shredded
- 4 slices turkey bacon, cooked and crumbled
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons fresh herbs (thyme, parsley, or chives)
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onions and garlic until translucent.
- Add the diced potatoes and chicken broth. Bring to a boil and then reduce to a simmer until the potatoes are tender.
- Blend the mixture until smooth, then return to the pot.
- Stir in the heavy cream, shredded cheddar, and crumbled turkey bacon.
- Simmer until the cheese is melted and the soup is heated through.
- Season with salt, pepper, and fresh herbs before serving.
Notes
- This soup can be made ahead of time and reheated when ready to serve.
- Feel free to swap out the turkey bacon for regular bacon for a richer flavor.
