This Challah Wild Mushroom and Herb Stuffing is a comforting side dish perfect for any meal.
Ingredients

- 1 loaf challah bread, cubed
- 2 cups wild mushrooms, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh thyme, chopped
- 2 cups vegetable broth
- 1 egg, beaten
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, sauté the onions and garlic in a bit of olive oil until translucent.
- Add the mushrooms and cook until they release their moisture.
- Stir in the parsley, thyme, and season with salt and pepper.
- In a large bowl, combine the cubed challah, vegetable broth, and the sautéed mixture.
- Add the beaten egg and mix well.
- Transfer the stuffing to a greased baking dish and bake for 25-30 minutes, or until golden brown.
Notes
- For added flavor, consider using different types of mushrooms.
- This stuffing can be prepared a day in advance and baked just before serving.
