Ingredients

  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sautéing until soft.
  3. Stir in chopped carrots and cook for another 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer until carrots are tender, about 20 minutes.
  6. Blend the soup until smooth, then return to the pot.
  7. Stir in cream, and season with salt, pepper, and ground ginger.
  8. Heat through and serve.
