Ingredients

- 4 cups chopped carrots
- 1 onion diced
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 cup cream
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp ground ginger
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sautéing until soft.
- Stir in chopped carrots and cook for another 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and let it simmer until carrots are tender, about 20 minutes.
- Blend the soup until smooth, then return to the pot.
- Stir in cream, and season with salt, pepper, and ground ginger.
- Heat through and serve.
